Yes we know buying a pancake mix is the easy option… but this Pancake Day we want to get the whole family involved in making these little circles of happiness from scratch. Did you know that the most amount of pancakes flipped in the shortest amount of time is 349 tosses in just 2 minutes! That record was set by Dean Gould in 1995… now I don't know about you but to me that's challenge accepted. 
 
Up and down the country we've been stocking up on chocolate spread, bananas and everyone's favourite… lemon and sugar. But the idea of broken eggs on the floor and flour all over the cat is enough to put any parent off Pancake Day. But it doesn't have to be like last year… we've got you covered with a recipe that we've been using for years and we at Primo feel is the fool proof way to win at P Day. 
 

What You'll Need

(Makes Around 6-8 Pancakes - Both Vegetarian And Freezable) 
1 Egg
1 Cup Of Flour (plain for crepe style pancakes or self-raising for American pancakes)
1 Cup Of Milk
Splash Of Water
Knob Of Butter, Melted 
 
- To make the pancake batter, simply whisk the eggs and flour together until smooth. Gradually add the milk taking care not to over work the mixture creating what should be a lump free batter.
 
- At this point you will want to stir the melted butter into the mixture and add any water if the batter needs thinning out. Now you can be as creative as you like! Why not try something new and add chocolate chips, blueberries or even cinnamon to your mixture. Just keep in mind this may alter the texture and thickness of your pancakes slightly. 
 
- Place your pancake pan over a medium heat and wipe the pan with oiled kitchen paper. Ladle some of the batter into the frying pan making sure you tilt and move the pan covering the whole surface. Pour off any excess and cook for about 30 seconds on each side until your pancake is golden brown in colour. Pile pancakes up and enjoy with your favourite toppings! 
 
- To achieve fluffy American style pancakes replace plain flour with self-raising and allow slightly longer to cook through. Ladle smaller amounts of the mixture into circles and try not to spread flat. Add blueberries, natural yogurt and granola for a healthy alternative Or Stack high with crispy bacon and drizzle over maple syrup for that signature USA taste.
